icon_lol.gificon_lol.gificon_lol.gif As soon as I got the new Paula Deen Holiday Baking magazine I knew that if I ever won this would be my recipe. I plan on trying it this weekend. Hope everyone likes the choice....I didn't realize how anxious I would be!! icon_redface.gificon_rolleyes.gif

Vanilla Coffee Cupcakes
Paula Deen

makes about 2 1/2 dz cupcakes

1 cup butter
2 cups sugar
4 large eggs
3 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup WHOLE milk
1/4 cup strong-brewed cold coffee
1 vanilla bean, scraped
Chocolate Ganache-recipe to follow
chocolate covered coffee beans for garnish ( I also thought that those coffee hershey kisses would be good for garnish that fiddlesticks seems to be the only one to have found!! icon_cry.gificon_cry.gif )

Preheat oven to 350. Foil or paper liners are fine. In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy. Add eggs, one at a time, beating well after each addition.
In a medium bowl, combine flour, baking powder, and salt. In a small bowl, combine milk and coffee. Gradually add flour mixture to butter mixture, alternately with milk mixture, beginning and ending with the flour mixture. Stir in scraped vanilla bean.
Spoon batter evenly into prepared pans. Bake for 18-20 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove cupcakes from pans, and cool completely on wire racks. Spread chocolate ganache evenly over cupcakes. Garnish with chocolate covered coffee beans if desired.

Chocolate Ganache
Makes about 2 cups

8 1 oz squares of semisweet chocolate
1/2 cup heavy whipping cream
1 Tablespoon light corn syrup

In a medium bowl, combine chocolate and cream. Microwave on high in 30 sec intervals, stirring between each, until chocolate is melted and smooth (about 2 minutes total). Stir in corn syrup. Use immediately.

Oooo! I need to go to Trader Joe's to get some vanilla beans or vanilla bean paste! I love chocolate and coffee together, and may actually have to jump in on this recipe and actually try it!

Great choice ! I have the Paula Deen Holiday Baking magazine to and also thought these look yumo! I so Love Paula Deen!!! And Yes Michelle I do still have some coffee kisses!! I also have some of that coffee crunch !Yum!

I think I might have to join the cupcake recipe bandwagon. These sound soooo good.

And, speaking of all the yummy kisses, can someone tell me where they've been able to find the pumpkin spice variety (my pregnant belly is dying to try them, lol). I have looked and looked and can't find them. TIA.

Try Target/ Walmart/walgreens. Those seem to be where we all find them the most ! Everyone seems to find the different flavors at different places in their area. Yep they sure taste good Mel ! Oh and when you open the bag it smells like you just went into starbucks ...

I would probably add a couple of tablespoons of finely ground coffee (not instant... espresso grind) to the dry ing. This looks lovely!

Ugh! Fiddle! You're KILLIN me!! I have found EVERY other flavor and there is pretty much nothing in the world that I love....as far as food or drink icon_lol.gif ...as coffee flavored ANYTHING!! Hey Mel! I'll come and pick you up...get some cuppies ready....we'll go to fiddle's house...feed her cuppies until she's on a sugar high and then we can just take hers!! icon_lol.gif And the crunch too!! I got mine at walmart, in the spice aisle. There were 2 beans in a mc cormick gourmet collection bottle. I think it was like $8 but sometimes ya just gotta splurge. icon_lol.gif

Forgot to tell ya that Paula says you can save the pod of the bean since you just use the scraped out seeds, put it in a container of granulated sugar to make vanilla flavored sugar.

I too got the Paula Deen magazine and it is filled with WONDERFUL recipes, as usual!!! All her cupcake recipes sounded sooo good!!!

I think I will also give these a try. they sound really good!!

I haven't been able to try any from the cupcake club yet (even though I've been around from the beginning of the original cupcake thread!) because of moving, out of town conference, etc... But these sound amazing and I hope to try them even if I can't get it done before the time is up. So thanks for this recipe!

I make Mels chocolate malted And yes they are the best ! But I wont fall for them being served by the two of you !!!auction off flavors of hershey kisses..What a great Idea and I have a special price for two sneaky bakers! I think $ 25.00 a bag to start the auction sounds more then fair!!! On that thought I might just have to go out and buy several more bags tomorrow ! Lets see, Oh ya how about several bags of COFFEE flavor ! HE HE !!!

Michelle You would NOT pay that much for a bag of candy !!!
To be honest since they started adding all these other flavors in the last month or so I have not seen the coffee ones. But Im sure they will show up again I mean why not with the way Im sure they are selling all the flavors like crazy! I mean just CC members alone are emptying the shelfs LOL! I know they are always out around xmas time the last few yrs! I bought several bags the last time I saw them( around end of july) so Im in good shape ! But when I see them again I can sell ya a bag for OHHHHH lets say $ 30 LOL!!!

Oh wow !! I never buy kisses unless they are on sale and I always pay $2.oo a bag or less with a store coupon. I would never pay that much ! Well Unless its for an order that they just have to have and I pass the $ on to them !
