A full sheet serves A LOT. And, you need to make sure your oven would fit the pan! Also, a full sheet cake might be open to interpretation. I suggest that you find out how many people they need to feed and go from there.

Here is a link to Wilton's serving guide; it might help you a lot.

Full Sheet: 18x24 (will not fit into standard oven) feeds appx 100
Half sheet: 12x18 feeds appx 50
Quarter Sheet: 9x12 feeds appx 25

Serving size assumes 2x2x2" high.

Find out what they customer needs as far as servings and goo from there.

You might try 2 half sheets w/2 layers each.
That way you could add a nice filling.
Yumm..........Strawberry.

I second the last suggestion of 2 12 x 18's that are double layered with a filling betweent the layers.

I never offered full sheets because #1, I didn't have boxes and boards that big, #2, didn't have an oven that big, and #3, just didn't want to deal with the cumbersome job of icing a full sheet.

2 12 x 18 double layers will give you the servings you need and look better too, imo.
