Okay ladies as you all know I was the lucky winner this week. I hope my cuppie recipe will be as great as they have all been. I am submitting one of my own recipes that I have got to make at least once a month for my family as they love these. I guess we can let this one go for 10 days if that's okay with everybody. I will go with the same method of choosing the next lucky person for CCCC#6. I will pm Jen with my number so it will be fair. My number is from 1 to 1000 as before.
I tried to pick a Peach recipe because of being from the Peach state. So here goes:

MEEMAW'S PEACHY KEEN CUPCAKES

Ingredients:
1 yellow cake mix with pudding (I use Pillsbury)
4 large eggs
1 cup of vegetable oil
1 cup of water
1 large can (29 oz.) of sliced peaches, drained save juice

Directions
Preheat oven to 400 but turn down to 325 when you put cuppies in.
In a large bowl, beat cake mix, eggs, oil , and water on low for 30 seconds. Beat on medium speed for 2 minutes. Pour batter immediately into cupcake pan with liners. Fill about 3/4 full and then slice each peach slice in half and put one in each cuppie. Bake until toothpick inserted comes out clean. Cool cuppies.

Glaze

I don't put icing on these because my family perfers the glaze with the peachs mixed in so these will be a little messy but yummy.

Glaze:
1 (8oz) package cream cheese
1 and 1/2 cup of powder sugar
3 table spoons of the peach juice
the rest of the peachs cut in small pieces

Mix all by hand and drizzle or spoon on cuppies . I then put in fridge to set up but they are also good just left out.

I love peach, so this one is right up my alley!!! One quick question, when you say to slice the peach slices in half, do you mean to make two thinner long ones, or to make two fat, short ones? I just want to be sure to do it right! icon_redface.gif

I've skipped the last few cuppy recipes, but I am totally doing this one. LOVE peaches. I really want to go back and try some of the others too....

Ok.. I made these tonight,added my link if you care to look ! I must say these are just Delicious ! MeeMaw You did good ! Great choice! I dont think I would change anything? They are just as good with or with out the glaze,Just depends on if your own taste prefers the extra sweetness or not ! I will have to rate these a 9 !! My Husband loves them.they are super simple and delicious, moist, baked up perfect, and you really dont have to bother with the glaze! The only thing I can think of is( and I meant to do it ) was add some of the peach juice to the batter in place of part of the water , Just to make them real peachy. Im not giving them a 10 because I think everthing can always improve and nothing is perfect ever! Thanks MeeMaw!! Its a keeper at my house !

Glad they turned out great for you Fiddle and a 9. As I said my whole family is crazy about these and I never thought of putting the juice in the batter but I will have to try that next time. Your cuppies look wonderful too. icon_biggrin.gif

Thanks for the comments ! Yes They are wonderful, hubby said they would also be good with pineapple? Have you tried them with any other fruit? He loves pineapple upside down cake and these remind him of that only in cuppy form.

OK. I will. I put them on a thread way back in March. I tried to get it started when the cupcake thread took off, before we started the recipe file. Just for recipes but it didn't take off. There was a link on the cupcake thread probably on page 2 or something like that.

My 6 yr. old Granddaughter is staying a couple of days with us so she got to help me make these!
We really like these cupcakes! I think the glaze is what makes these. Kind of like the carrot ones. The glaze is delicious! Like MeeMaw said, I think the other possibilities could be many. I would like to add maybe some cinnamon and, like Fiddle said, the peach juice to the mix. I hated to waste the rest of it. They would be great with whipped cream piped in the middle too. They domed nice but flattened out when they cooled. Made right at 2 dozen. I could see making any kind of fruit version with these and making them pie flavors!
I rate these 4 out of 5. Easy, flavorful and versatile! thumbs_up.gif
