Marshmallow Frosting?

Hi everyone, this is my first post. icon_smile.gif I have read so much here already!

I am making 50 cupcakes for a reunion this weekend and am looking for the best s'more cupcake idea I can find. I have already found a great graham cracker cupcake recipe that I think I'll be filling with a chocolate ganache. I want to top it with a marshmallow frosting, but not necessarily a american buttercream style. I really want it to taste like marshmallow and be fluffy. I've contemplated perhaps just using actual marshmallows and then browning them, using a little chocolate ganache underneat as the icing. I've also seen a "marshmallow" swiss meringue on Martha Stewart's site that looks pretty because you torche the swirls... but reading the recipe it sounds like probably tastes like every other swiss meringue - tasty, yet not marshmallow really.

Has anyone found/used a marshmallow frosting that is fluffy and has authentic flavor?

If I can't find one, I suppose I could fill my cupcakes with marshmallow and frost with chocolate - I Just though it might look cooler to have the tower of marshmallow fluffiness on top. icon_smile.gif

I made smores cupcakes and I used this recipe, its awesome!

Fluffy 7 minute frosting
1 c. Marshmallow Fluff
2 egg whites, at room temperature
1 c. sugar
1/4 tsp. cream of tartar
1/8 tsp. salt
1/4 c. water
1 tsp. vanilla extract



In double-boiler top over hot, not boiling water, combine all ingredients except vanilla. With hand mixer, beat until soft peaks form. Remove from heat and continue beating until stiff. Beat in vanilla. Makes enough to frost 24 cupcakes.
