I'd like to try these...if I can find the mini cups here somewhere tomorrow...
If I try to pipe with the ganache with a 1M(never tried it,never piped ganache) ...should I make more icing/ganache to account for the swirls...or is your one recipe enough for 24?
Thanks

Anyone...? Jenmac75...? Do I need more than one batch of ganache?
Thanks

I'd guess it would be enough because in order to pipe it, you have to whip it first, which is going to turn it into more icing technically because of all the air you whip into it. HTH!!

I just finished baking my cuppies and they are so rich and wonderful! My batch got 18 cuppies (the last 6 I put more batter in the cups so they could dome better-and they did!). I tasted one without the ganache and it was already rich!!

The recipe for the ganache was way too much, I just copied my recipe that I had, but you could easily half this and it will still be plenty for 24 cupcakes. And I used my food chopper to cut up peanut butter cups on top after the ganache cooled.

So I would say these were a success. You definitely have to have a glass of milk with this one! This will be a keeper.

I am going to try and attach my picture but sometimes it doesn't work on the forum page. We will see....

Im not sure if there is a cupcake club joining procedure, but i saw this post on friday and it sounded yummy. I made them this weekend and they turned out well. I made them to the specifications on the front page, except im not sure how to make the brownies "cake like" - there were no directions on the box. But they are a big hit anyway!

Anywho, I didn't have a chance to try these cuppies this weekend, so I will try to get to them this week.

Didn't get these done over the weekend but I did do them today. They're cooling right now. I tried one without the ganache and I'll try another after frosting! icon_lol.gif They are nice and moist and not near as rich as I thought they'd be. I did the cake version of the brownies and used the rpb cup. Now I'm off to make my ganache!

Hey Mel! When you dip your cuppies to top do you do it at room temp or do you refrigerate first? icon_confused.gif

I always dip at room temp. That way you get a nice covering, but not too thick. thumbs_up.gif I haven't had the chance to make these yet. I'm getting annoyed. Maybe I should just go make them right now!!

Ok! I'm gonna try to post in the forum again... icon_confused.gif Just finished these and they are a huge hit! Kids and hubby LOVE them! icon_lol.gif I dipped the tops at room temp just like Mel said. Super easy. I forgot to tell earlier that mine made 16 cuppies. I really like this ganache too. I've tried it once before, about 1 1/2 years ago and I thought that it was really sweet. I like how this is so shiny and not tooo sweet. I think I'll give it 4 out of 5 cuppies, just because I like it but don't really think I would die without it. It is super easy though!! So maybe 4.5! icon_lol.gif

Tried...I'm an idiot!! icon_lol.gif I'll post it in my pics!

I couldn't post in my photos either so here's a link to my facebook album...

They're baked...don't think they've turned out like everyone else's...the DH Fudge brownie mix I got didn't have a "cake" option...I got 20...pushed the mini pb cup in,and the batter was barely level with the edges...they look like little brownie doughnuts, the pb cup being the hol...will have to try piping on ganache/icing,because there's an indentation....haven't tasted them yet...

Jane~mine kind of did that too. I think next time I'll fill a little fuller. After I dipped my tops I just spooned a little extra in the middle before I put the pb cups on. Worked out ok. icon_lol.gif

Hi Ladies,

I'd like to jump on it and try this recipe, but I'm in Oz and I don't actually use packet cake mixes. We don't have the range that you have, and I have lots of littlies/friends that can't have the additives. Can I just use my own cake recipe?

Please forgive me if I sound like a total idiot, but where is Oz? The only one I've heard of is at the end of the yellow brick road! icon_lol.gif

You can certainly do it however you'd like. The main point of the whole thing is to try the recipe the way it's listed, but in a situation like this where you simply don't HAVE the ingredients, then maybe you can just use the basic IDEA of the recipe, and substitute your own ingredients/recipe. In other words, assemble in the way she listed, but use your own batter? Does that make sense?

But thanks for joining us, regardless of where you are!! We love making new friends!

Sorry - Oz as in Australia, we like to slang it icon_smile.gif We don't have half the stuff you guys can get - but I don't want to be left out icon_cry.gif

I'm a bit of a cupcake junkie plus my hubby loves the sound of peanut butter chocolate cupcakes - now to track down the reese's cups - it ain't easy.

I tried a recipe for brownie cupcakes (using a brownie mix) with bite size Reece's peanut butter cups and they were really good. The recipe said to poke the cup down into the batter in each cup, but they rose to the top as the batter baked. I didn't like that. Next time I'll fill the cups half way, add the Reeces then the other half of batter on top, to put the peanut butter goodie in the middle. They were yummy and different. I think I got the recipe from a cupcake book I got from the library. Good book I wouldn't mind owning. Could also have been the other book I borrowed the same day titled Brownie Bliss. Another good source. All recipes starting with a boxed brownie mix.

When I put my pb cup in the middle the cupcake batter didn't fill over them either, so I got a spoon and just "swirled" the batter around the pb cup until it covered it. It worked perfect and domed really good on my second batch. I also drizzled my ganache on them because I didn't want too much ganache on the cuppies in case some people didn't like that much ganache (I know I always do!).

Michelle, yours look great!

Oh duh. Now I feel really stupid. I'm telling you, last night was not a good night. I had just gotten home from the hospital, an apparent kidney stone attack again, and I was not thinking clearly. icon_redface.gif I absolutely knew that was slang for that. Sorry.

It's weird to think of the things that are not 'universal'. Who'd have thought you couldn't get peanut butter cups? Then again... how much luck would I have finding Vegemite over here?? I hope you find them so you can make this. If not... you can always make those home made too... they're not that hard!
