Marshmallow Fondant In The Fridge??

I can't find a thread on this. I am sure there is one out there.. Can you put a MF covered cake in the fridge. Also, doesn't MF form a crust like regular fondant? Please help..

Yes and no. You can but you need to allow a LOT of time for it to dry out once it comes out of the fridge, unless you don't mind the fondant being shiny. I'm not an expert as I've only done 2 in the fridge, the first seemed to dry out just fine but the second took forever to get the shine off, it just looked wet for hours. Also of course once it's out of the fridge it will get sticky too so you can't touch it till it's dry.

If you have heavy decorations on it that is another story. Flat deco's fare fine but the added moisture to heavier deco's can cause them to collapse; or else the moisture/condensation can cause the colors to run...or the deco's to slip off. I did a pumpkin cake where only the leaves and tendrils were fondant. They were so cute all sticking up off the cake...till morning. What was I thinking, I should have added the leaves in the morning. Doh! More recently I did cupcakes with Wall-E and EVE faces on them, they were fine refrigerated for 1 day but by day 2 the black in both faces had began to run!! icon_surprised.gif Thank goodness those were leftovers.

I've read here that Satin Ice refrigerates fine, I am thinking of switching to it the next time I need to refrigerate a fondant covered cake.

I put mmf cakes in the fridge and leave them on the counter. Just don't touch the mmf when it comes directly from the fridge allow it to come to room temp.

I like mmf best from the fridge, I guess it's just a personal preference thing really.

I would not put cakes with free standing fondant bits in the fridge just to be on the safe side.

I usually leave them in the fridge pre wrapped and then take them out about an hour before collection/delivery.
