CCCC #3 - Tomato, Basil, & Mozza!

Woo!! I am lucky #3 in the Cake Central Cupcake Club! Itâs an honor to lead the masses into the murky waters of an unknown recipe, and I hope we have some serious success stories to report after this! Now⦠it wouldnât be me if I werenât mixing it up a bit, (No pun intended!) (Oh, none taken!) so I am going to submit something a little different. I have not even had the chance to try this recipe, so I am in no way endorsing it. I want to make that clear! If itâs nasty you canât blame me!! But seriously, it just sounds good! So, without further ado, letâs take a departure from the sweet, Iâd like to tryâ¦

Tomato, Basil, & Mozzarella Muffins!

2 T. chopped fresh basil
2 ¾ c. AP flour
2 T. baking powder
½ t. salt
4 lightly beaten eggs
½ cup olive oil
10 ¾ oz. can condensed tomato soup
3 T. sundried tomatoes
½ c. shredded mozzarella

Preheat the oven to 350 degrees.

In a medium bowl mix the dry ingredients and set aside. (Chop your basil gently, don't manhandle it!)

In your mixer, combine eggs, olive oil, soup, and sundried tomatoes until well combined. Gently add in flour mixture until just combined. (Do NOT overmix!! It will be lumpy.)

Spoon into greased muffin pan and bake for 20 minutes or until done. Cool for five minutes, then remove muffins from pan. Serve warm.

Yield: 12 muffins

Now I can already tell you... I will certainly try the recipe as it lies, so to speak, but it is so obviously missing garlic in my mind. So, I will make them twice, and the second time include garlic. I mean, what are italian flavors without garlic? Am I right?! icon_rolleyes.gif

Since it worked so well to do the number between 1 and 1000, I think we should absolutely carry on with that. I will do the same thing. I have PM'ed my number to our previous hostess, and she will keep me 'honest' as it were. And no bribing her for hints either!! You naughty, naughty little cuppy addicts! Closest one to my number gets to be #4! Good luck, and let's hear all about your muffins. Oh, cheeky! icon_redface.gif

I'm looking forward to it too! I've been wanting to try this one, it's some of my favorite flavors!! I'm sitting here eating tomato basil wheat thins right now! thumbs_up.gif

Omg ! These sound wonderful ,and I have fresh basil from my garden.And the rest of the ingredients is stuff I always have.
Ok whats the cut off date, we need to try these by ?

Omigosh, I can't believe I forgot that part! Let's say in 10 days (on the 17th) we'll have a new person selected, then they can start the new thread as soon as they are ready!!

Oh Mel,

These sound wonderful and I think I'm going to brush some of mine with butter garlic mixture. I too like the garlic. icon_biggrin.gif

oh YUM! What an obvious combo of flavors, but I would never have thought of it in a muffin!! And ditto on the garlic! I'm delivering a lasagna dinner this week to a friend who just had a baby, and instead of garlic bread I think I'll make these to go with it. Can't wait to try these!

MMMMMMMMMMMMMM These sound like the Tomato basil bagels I get from a local bagel shop. They are TO DIE FOR!!!!!!! I make mini pizzas out of them for the kids...Sprinkle with Mozz cheese broil for a few minutes...whoo-la. All I need is the basil... Hmmmmm

Good choice Mel! And MeeMaw, the garlic butter sounds great! You could still make the original recipe and brush them with melted garlic butter before serving!
I still want to try the Lemon cc's. Just waiting for those darn lemons to come down in price! icon_sad.gif I could use the concentrated juice. ( I can get that now) but the zest of 6 lemons would cost me about $8.00! Crazy!!

The funny thing is, I HATE tomatoes, but love tomato basil soup, so I will definately give these a try!! icon_biggrin.gif Thanks for the twist Mel

Oh, that's what I'm talking about!! I intend to do it like they do with the Cheddar Bay Biscuits at Red Lobster!!! OH YAH!!! WOOOOOO!!!
