So I was informed by the Larimer County Health Dept that you can't license a home food business in Colorado, I never actually got to talk to anyone, they just left be a two sentence message stating that you can't have a home based food business. Argh. So what do I do now? I know that some states don't consider cakes to be the same as retail or commercial food sales. What is the stance on that here in Colorado? Also, if you don't get licensed that way, do you still go for a business license, or is that not a good idea? And can I rent a church or a restaurant kitchen after hours or bake out of a warehouse? I have made many phone calls and am not getting my questions answered, people either don't know or just don't care.
What do you folks do?

I'd just keep calling and asking who you need talk to to get your questions answered. There has to be someone in the Dept. of Agriculture there in CO who knows the rules. Just be persistent. It's better to get the exact rules and laws directly from them anyway. They should be able to send you all the information as well. Good luck!
