Looking for a tried & true gingerbread cupcake recipe icon_biggrin.gif I have found several recipes online (as well as one here w/o a rating) but would like a recipe that someone makes over and over again icon_biggrin.gif TIA

I have tried a couple scratch recipes, but haven't found "the one" that I really love yet as, so I'm still looking as well.

However, for a "good for right now" option, Betty Crocker's Gingerbread mix is actually very good. Good spiciness, flavor and moistness, although it has that airy box-cake-mix texture that I'm not overly fond of.

Excellent with mango buttercream icon_wink.gif

I don't think I've ever seen the gingerbread mix here except at Christmas time....I guess the search continues icon_cry.gif

Check a couple different supermarkets - mine carries it year round.

I have tried several times to make the perfect gingerbread cupcake icon_cry.gif

I finally figured it out.

If you can find the Betty Crocker gingerbread mix:

mix it up as the directions say except in a mixing bowl then do this:

In a separate bowl, sift together,
2 C cake flour (or 1/2 ap flour & 1/2 cake flour)
1/2 t baking soda
2 t ginger
1 t cinnamon
1/2 t nutmeg

Add
2 eggs
1 C brown sugar
7 oz soft butter
1/2 C milk
2T corn syrup
2 T molasses

beat about 2 min then add to the Betty Crocker you already made, and mix gently. bake about 30 min.

You should have a light & fluffy gingerbread cupcake with a little darker color and a good gingerbread taste.


Good luck, I made these with a lemon butter cream icing and candied lemon peel. YUM.

I made a fabulous ginger cupcake that I saw Bobby Flay do last Christmas!! It was awesome he had a mango buttercream frosting to go on it! You should be able to find it on the food network site... I cant quite remember how they were titled something like mango gingerbread cupcakes... If you cant find it pm me... its definitely worth looking for!
