Hi! I am in need of some sizing assitance! I need to do a 3 tier cake for 120- 140 people. She wants 3 different flavors, so how do I gauge how many servings for which flavor? She wants the top tier to be the only choc w/ choc mousse, and that is generally saved for the 1st anniversary. Do i have to make a sheet cake in addition to the actual cake?

Got off topic! But my original question is what sizes should I use, because I don't want a large top cake, I would like to keep it at 6", but I'm afraid that if I do 4" difference between layers that it might look like a little too much space.

Does anyone have any tips for me? ANY help is appreciated! icon_biggrin.gif

Have you checked out the articles on this website regarding the serving sizes:

There are articles for the 2" and 3" pans. Hope this helps!

IMO, four inches between tiers is the ideal difference. Three inches between is my second choice. I wouldn't do two-inch difference on a 3 tier cake. I don't like it. Makes the cake look like a bullet. 6-10-14 would be perfect. 7-11-15 would be even perfecter icon_confused.gif , but not many people have odd sized pans.

As for the flavors, it's up to the bride which tiers are which flavors. If she wants an equal number of pieces of each flavor, then you can offer to make additional cake (for additional charge, of course), but it's usually not necessary.
