I just did 180 the weekend before last for my friend's wedding.
I made the icing Thursday night. I started baking Friday at noon and used the convection oven, baking 48 cupcakes at a time. While they were baking I was getting the next batch ready to go.
I bought some plastic clamshell containers from the grocery store, and I am so glad I did - otherwise transportation would be a nightmare. Once the cupcakes cooled, I put them right into the clamshell.
Then, I iced them and 'confettied' them right in the clamshell. I was done in probably 5 hours or so.
