I just made a dump truck cake for a little boy's birthday. It is totally covered with fondant. The cake is for Saturday. Do I freeze it or just leave it in the fridge? TIA.

I can't decide. Sometimes I wonder if the fridge drys the cake out. icon_confused.gif But, if you decide to freeze it, make sure you have enough time to let it completely defrost in the refridgerator. That way you will have very little shine if any on the fondant! Freezing seems to make the cake more moist. Don't ever defrost a cake with fondant, on your counter. It defrosts to fast and makes the fondant very shinny wet looking. thumbsdown.gif Good luck!
