Cake Flavor Question

I have been asked to do a french vanilla wedding cake with a "hint of
lavender". I'm not sure what that means! Is there a lavender extract?
I was planning to do a fruit filling, maybe a mousse. The cake is 3 stack squares with plain white buttercream, peonies and ribbon.

Gee that's a new one! I have never heard of a lavendar extract, but why not try to steap some dried lav. like you would if you were making hot tea and then cool the liquid and use it instead of water in your batter. Sounds reasonable to me. Happy Baking!

I don't know if this will help but at my father's store they have lavender chocolate! There are pieces of lavender in the chocolate! I think itâs okay (not my personal favorite), but my friend is obsessed with it! We have a store where I am from where they sell nothing but lavender products. I would call a place like that and ask what they suggest. If you don't have a place, let me know I and I will give you the number to ours! I hear they are very nice and I am sure would be more than willing to help you!

martha stewart uses a lavendar extract for cooking making... same as mint extract. i cant remember what episode or where to find it but maybe checking her website out will help you find it or information about it. good luck

I purchased some dried lavender from an Epicurious Spice Party & made lavender lemon shortbread at Christmas...they were very good. I have found a web site that has recipes for making your own lavender extract as well as lavender liqueur (this might be an idea to add some lavender flavor), here's the site:

Hmmm, I'm not sure on how great lavender would actually taste! But I'd say just put some 'lavender aroma' in it so the vanilla taste has a slight smell of lavender, just a thought! icon_smile.gif
