How Long Do Cookies Stay Fresh?

Hi!
I usually do my cookies after someone asks for them and just before the event date. I am concerned about "shelf life" of the decorated and wrapped cookies. Once they are wrapped how long would you consider them fresh?

A friend of mine at work asked if I would considered doing some for her shop for Valentine's Day (around 400 or so delivered at the beginning of Feb). I have done 200 qty orders but always did those right before the event date.

Anybody know or have experience with holding them? I would need to consider the length of time it would take me to make them and the counter life of them. I don't want to commit to this volume if I can't guarantee their freshness for a period of time.

I hope this came out right... I would probably use the NFSC recipe for these.

I think i would change recipes. Use a shortbread type that will last longer, they should give you another week. Or do them is batches. Does she really want 400 all at once?? I would say a wrapped cookie will last for a week. Personally i don't care for them after a couple of days, but thats cause i know what they taste like fresh.
