I have a request for a wedding cake and on the bottom layer she wants a caramel filling and the 2nd layer she wants a lemon filling. Does anyone have any recipes for this.

Hi -- here are two you might like:

Caramel Cream:
o 1 cup packed brown sugar
o ½ cup butter (1 stick)
o ¼ cup milk
o 2 ½ cups powdered sugar

o Heat sugar, milk, and butter on low to blend, stirring gently, then turn heat to medium
o Heat (without stirring), until it just comes to a boil. continue for 3 minutes.
o Remove from heat, then pour into Kitchen Aid mixing bowl.
o let cool slightly, then beat with KA until creamy, then add powdered sugar
o Beat until creamy. Add some more milk if needed.
o Easier to spread when still slightly warm.


Lemon Filling: 2 cups

o1 cup sugar
o 3 T cornstarch
o ½ tsp salt
o 1 cup water
o 2 T grated lemon peel
o ½ cup lemon juice (fresh is better)

o 2 T butter
o Bring all ingredients to a boil in medium saucepan, using a whisk to stir well.
o Reduce heat, and boil for 1 minute over low heat.
o Cool. Must be cooled before stacking layers.

Lemon Cream: mix equal parts lemon filling with butter-cream.

I love, love, love my caramel filling- it's EASY and made form storebought stuff. I pkg 8 oz cream cheese, 1/2 C PS, 1/4 -1/2 C caramel topping. blend all together with a hand mixer. YUMMMM!!

does your easy caramel filling have to be refrigerated? It sounds yummy.
