I get to start my Wilton class II tonight I can't wait to learn about new techniques and flower making I think we will cover royal icing I know my instructer is not a fan of fondant but I hope she shows us because I want to learn soo bad! Wish me luck! My kiddos started back to school this week and I get to start my new class!

That is great!! Can't wait to see some of your creations!! I have only taken the first course and now I live about 45 min away from anywhere so it might be a little while. You will have to let us know how it goes!

I had my first Wilton II class last week. We learned the shell border, the reverse shell, the rosette, basketweave, and some other little things. Tonight and next week we learn all the fun royal icing flowers. The last week you make your cake.

Wilton III covers fondant, and tiered cakes. That is next month.

I am experimenting on my own with the MMF. If you do a small batch on a small 6" cake, it's perfect, and not a lot of expense.

The place where I am going does not do a class III I am going to have to look into maybe hobby lobby or somewhere else for it.

Hey Sugar, Alot of that we learned in class I ! Okay tonight we learned cornellia lace, reverse shell border, apple blossums, shell with flute. next week is Royal Icing flowers I can't wait!! I am still tring to talk her into fondant she has the whole class not wanting to learn because they think it taste bad so I told her about MMF. Hopefully she will think about it! I am bringing her that recipe next week! She was just asking if it got hard like regular fondant.

Alot of it was review for us too.

Last night was fun. My royal icing wasn't the right consistancy. A tip - practice a bit before you go to class.

I heard you have too beat the Heck out of it to get it the right consistancy! That is really the only part I am worried about. I like how you are one week ahead of me whe can share what the difference is in what our instructers teach
