I would like to make some cookies for my daughter's communion to give to friends and family. I want to ice the attached picture in RI and then place on the cookies and then write her name and the sate. How far ahead can I make the icing picture and store them?

You can make them whenever you want. The royal icing will keep indefinitely. Let it dry and then store in an air tight container, but make sure they are very dry before you store them.
