Since everything is closed..I armed myself with several bags of Marshmellows in case I run out of Fondant.

I've got 3 cakes down and 6 more to go..and then the 2 donations of cake and goodies..but that I can take on Christmas day..

all my cakes are due tomorrow..so late night for me once again..

sigh, the business of cake decorating!! gotta love it!! icon_cool.gif

I just did 17 hours friday, I told Gina she could have the day off. So I wanted everything done so all I have to do is wait on customers.
I'm done and not coming back to the shop til Wednesday.

Wow! I thankfully am done for the week, but am trying to get a head start on next weeks orders. I didn't have even close to what you had for cake orders, just 1 cake and 45 dozen assorted cake truffles. I bet you will be excited for Christmas to come so you can sit down and put your feet up!

Wish I had one more day to bake.....didn't start gift shopping until Thursday, and spent most of the day yesterday at the mall instead of baking; and I want to give baked goods as gifts! today will be delivering to two folks and cleaning......nevermind cookie decorating! Guess I better get of this website and actually do some work! LOL!! icon_lol.gif

Geezch! I thought that I was going crazy with 2 Pig-Pickin Cakes and 170 bags of frosted sugar cookies (4 in each bag)!!!

Thanks! I"m going in a few hours early so I can do the finishing touches on my cakes..air brushing 4 cakes..

painting piping gel pointsettias on 2 maybe 3 others...then I can take my time with the 2 donated cakes...

finish my chocolate dipped pretzels, my oreo mice ( thanks Doug ) and the oreo ornaments ( thanks CC member..lol) I have 20 Police Marshmellow snowmen all ready to go and 1 dozen dipped and decorated pretzels...

Then, I will make as many cake balls as I can from a couple of cakes that I've had in the freezer for a few days..lol

and then go Deliver the whole shebang to the Local Police Department with swag bags so they can distribute the goodies to the neighborhood!

whew...

and all in my little Pink Barbie 300 Sq Ft. Bakery..lol

I thought I was going to have a HORRIBLE Christmas, my room mate burnt dinner and left the back door open and my cat ran away..I spent 3 hours looking for him all over the neighborhood!

In between times my son was out there too...then this morning ...I find the bugger sleeping on my bed!!!! icon_surprised.gif

I think he was waiting for someone to open the door at 3 am when my room mate goes to work.. thumbs_up.gif

He got a good talking to but he STILL won't tell me where he went!! icon_lol.gif

I had about 24 hours off and was feelin' pretty dang great about it. I was just millin' around Wal-Mart last night. Just pushin' my lil' cart around thinkin' "Yeah. I got it all done and still have some hours to spare!"

Yeah. Then the phone rings. "Hi. I know it's reaaaallly late notice, but--"(my all time favorite words) icon_mad.gif

Anyway--a carrot cake cheesecake, a New York style, and a coconut cake. Due today. By 5 p.m. Yeah.

Here's my recipe:
1 DH White Cake Mix
11 oz. Mandarin Oranges WITH the juice
1/2 cup vegetable oil
4 eggs

Mix together for about 2 minutes, but don't overbeat. The mandarin oranges will get all broken up...that's okay.

Bake about 20-35 minutes at 325-350 depending on your oven.

Frosting:
8 oz. Cool Whip
20 oz. can Crushed Pineapple (drained)
1 small pkg. Vanilla Instant Pudding

Mix together the Pineapple and pudding and then fold the cool whip into it. Then frost the cake as you normally would.

WARNING: This cake is addictive.

It's going..my hand is killing me and I have it on the vibrating pillow...Tomorrow I finish my donated cakes and goodies and deliver them!

so, then I'm done ..and the next weeks starts!! lol

lol...I live in North Carolina (I'm originally from PA) and it's a VERY popular cake here in the summer. It's often brought to potluck dinners and "pig-pickin's." A "Pig-Pickin" is a cookout where a whole pig is roasted on an open-air bbq grill and once it's cooked, they shread up the meat...especially the shoulder and make pork BBQ with a vinegar sauce (not red bbq) and you eat it with coleslaw, baked beans and hushpuppies. It's just a tradition around here.

Too funny..I KNOW orange mandarin cake..and Pork BBQ on an open spit..but never heard of pig pickin' cake...
