I need to make toffee for my sister's wedding reception next Saturday (10/20). Does anyone have any experience with storage/freezing/how far it can be made in advance?

Does it need to be stored air tight? In loose foil? I really have no idea because I usually give it away or eat it before it needs to be stored! icon_biggrin.gif

You can store about a week. Humidity really affects this candy, It gets sticky fast. Just put it in a ziplock bag at room temp. The fridge and freezer have too much moisture for it.

Thank you for your reply! We put it in air tight containers and are storing at room temp. Hopefully that will be fine.

I thought you could freeze toffee and similar candy...but not put in fridge.

It's past your sisters reception. FYI I make almond toffee every year for Christmas. I store between layers of wax paper in a tin cookie/candy container to prevent it from sticking together. I started making it after Thanksgiving because I can only do so much at a time / day and I only make it when the sun is shining. If it's cloudy I tend to slightly burn it, however it's still edible and I'm probably the only one in the family that notices it.

I'd love to get a good rich & buttery recipe for toffee. I'm in Florida, have to be careful when it's made. However I have found dipping it in chocolate and rolling in nuts helps offest any moisture issues. Unfortunately the toffee flavor gets lost....
Any ideas??

That's something to work on - moisture. I've not considered it before since I've been pretty much concerned about the sun shining when I make toffee...everyone else seems to think that is odd, but there is something to it. I still get some tackiness even when stored in air tight container which is why I use wax paper instead of paper towels. It will stick.

Flavor ---I put a very thin layer of chocolate on the toffee. I have tried it without chocolate when I left out the almonds so I could just suck on it because I needed to go to the dentist. It was fine, just not the same.

That's an issue I wish someone would address for CC. Here's a perfect example - a recipe for English Toffee listed under the "Cookie" topic..."Candy Making" should have somewhere to post recipes too.

I'm a former cake decorator and also President of the Sugar Arts Guild so hold both in high regard - and spend a lot of time on this site!. There's so much magnificent work and talent here. The beautiful flowers are amazing, and just browsing the gallery should provide the inspiration anyone needs.

However my primary interest is in sugar work, and would love to see CC expand into this area. Hopefully it will be part of the CC site update.
Anyway- (step off the soapbox, Jane) if you'd like to pm your recipe to me, I'd love to see it.
