Mmf Questions... Again :)

Hi!

I just made some MMF from the instructions in the articles gallery and have some questions.

1. When microwaving the marshmallows, do you stir to see if they have melted? I saw that they would liquify from the bottom of the bowl up, do you continue the 30 second interval heating until they are all melted? I ended up stiring mine just because I didn't think it should take 3 minutes!

2. When do we incorporate the extract/flavouring and water?

3. Should I grease the mixer attachments too?

I forgot to add water until I noticed (with my dough hook) that it just wasn't coming together. I don't know if it was mixed to long... seems dry already. I did wrap it up now, so I'll see how it is in an hour or so!

I melted mine for the 30 seconds, then stired if not all melted then i would do intervals of 10 seconds. I mixed my mix by hand not with the mixer and had good results but, if I were to use my mixer I would grease the paddle.

I always stir after the first 30 seconds...this is usually enough to get them all melted and I don't have to microwave any more. I also put the flavoring and water on the marshmallows before I start melting them. I always spray Pam on everything that the MMF is going to touch including the attachments on my Mixer.

I put my water and flavorings in the bowl with the marshmallows then nuke it for 30 secs... didn't have to nuke it again as it all melted when I stirred it..

I add in water, and then microwave for 30 seconds, stir, and then microwave again if needed.

I add in flavors after it's cooked.

I knead by hand. I've heard stories of people ruining mixers this way!
