I'm just starting to sell to friends and family. I did a trunk show at my gym a few weeks ago and sold a little. How many cake truffles can you sell at a gym? Anyway, SEVERAL people took fliers sayign they'd place holiday orders. I was starting to doubt it because I hadn't received any orders yet. After class today two ladies placed orders for cake truffles. That's what I'm highlighting this year. They are quick, easy and can be made in advance. I just had to share because I am SO excited. So far, I have 17 dozen truffles to make icon_biggrin.gif

I've been making the peanut butter ones for a while and freeze and refreeze them without any problem even after being dipped (i use gheridelli). Has anyone done that with the cake truffles? All of the posts I've read only refer to freezing before dipping. One customer asked me how long will they keep.

TIA

icon_surprised.gificon_smile.gif WOW!!

I'm so glad to have found this posting! I had asked this very same question about 3 weeks ago...One person had said that, yes--they could be frozen after being dipped. Which is totally great for me, because my cabin business lady wants to sell these with the tea basket promo. icon_smile.gif

17 dozen?? Wow! That's a lot of work right there.

I'd say they'd be fine for a month in the freezer if wrapped tightly. (As if someone could actually leave them in a freezer knowing they were there! icon_twisted.gif )

My latest "flavor-flave" is the raspberry ones. I used vanilla cake crumbs and raspberry pie filling, dipped in white almond bark! Yuuuum.

KUDOS to you mom2csc!! That's how business gets started! Word of mouth will soon have your phone ringing and ringing! icon_wink.gif

Make sure you set up some limits for yourself so you don't take orders for more than you can handle at first. It's hard to turn away orders, but if you've told yourself you simply can't do more than 3 or 5 (or whatever) cake orders in 1 week, it will be easier, because you will know that more than your limit=STRESS!

Congrats on your orders thumbs_up.gif ...I can't wait until I reach the point of being able to take orders!
I am making a cake for my staff meeting tomorrow and think this might also be a great excuse to try out the cake balls! I know I have Evaporated Milk in my cabinet at home, but no coffee creamer. Can I used this? Should I add anything to compensate for the flavor (or lack of)?
Also, I see that you said you didp them in Ghiradelli Chocolate...is this the same Ghiradelli now sold in the supermarkets?

TIA

thanks so much, that's great to hear about freezing. I've read many many posts and have gotten lots of great advise from this board. Having 3 little ones (4, 3, & 1) I have already decided to limit the number of orders I take a week. Thanks for the suggestion. I want this to remain fun for me and not stress me out, especially around the holidays. That's also why I'm doing cake truffles and cookies instead of cakes right now. For me its easier. I have cookie dough in the freezer in holiday shapes ready to bake and I'm planning to bake the cakes for the truffles tonight. Depending on how the night goes, I might roll them tonight and dip next week.

I buy my chocolate from Sam's. I think the box is reasonable and it lasts a LONG time. It may be $6 for 2.5 lbs. I haven't tried dipping in the candy melts before, but I might this time.

The first time I make truffles, I didn't use creamer. You can use icing, alcohol (baileys) there are tons of threads with combos. I'd read through them and find something you have at home. I love chocolate chips in mine. I just bought some peppermint crunch baking chips today that I want to try.

Its great sharing with people who understand and share your passion.

I'll post pictures after. They are going to be packaged in sets of 6, off to find cute boxes. In case anyone is interested, I'm selling them $4 half dozen/ $8 dozen in a box. That's the price I sold for at the trunk show. I use a box mix extender and get @ 5 dozen from one cake. Just things I've wondered about reading others posts. Off to get my boxes thumbs_up.gif

cake truffles are the same as cake balls.

There are recipes for peanut butter truffles and oreo truffles on this site also. Peanut butter, powdered sugar and rice crispies. i'll look for it when I get a chance.

cake mix extender, the recipe is here also- you add flour, sugar and sour cream to the box mix. It gives it more of a homemade taste and a little more batter.
