Decorating Frozen Cake Layers???

I find it easier to decorate froaen cake layers(like SOLID frozen)....mostly because of my heavy/hot hands......
would I decorate the cake layers(frozen state) and then let them thaw, completed in the fridge or will that make them sweat???

otherwise, what would be the best way to decorate them? I have to bake the cakes a week early, should I freeze them and then ice them thawed? what causes the sweating??

I am worried that I am going to end up with sweaty, melty italian cream cakes!!!!!!!!
ughhhhhh, help

I love icing frozen cake but once the layers start to thaw they start to sweat. I have found that if the cake is blistering frozen it will crack the icing.

We soak our Italin cream cakes with a rum soak, therefore when we ice it, it's refrigerator cold.

My recommendation, since you prefer icing frozen cake, crumb ice the cake- place into your refrigerator until your icing has crusted over. At that point if condensation have beaded on your cake, you can simply spatula it off. Then you will be able to decorate your italian cream cake with no worries.
