Hi! I made my first scratch cake and scratch buttercream tonight. I used the Vanilla cake recipe and the Swiss Meringue ButterCream recipe from the "Confetti Cakes" book by Elisa Strauss. I liked the cake but the bc seemed a bit too buttery or whippy for me...good but not my style...my husband loved it! Do you know of a better bc that isnt so buttery or whippy? thats also scratch!

Hi April, I've just bought that book but haven't tried any recipes yet ( will be making banana cake tomorrow ) so I don't know what her meringue BC is like....I made SMBC from a martha stewart recipe recently ( yuuuuccckkk !!! - it was like eating butter icon_sad.gif )

A friend borrowed my book and made the chocolate cake recipe and I tasted it. Seemed odd tasting to me.

I made Colette Peter's SMBC and last night just made Elisa's. I agree that they are pretty buttery; Colette's even more so. I ended up mixing up shortening and powdered sugar, then adding it to the recipe and it turned out nice, still not too sweet but cut down on the buttery taste.

I made Elisa's chocolate cake and it came out very dry. Did anyone else have a similar experience, or could I have done something wrong?

I just made 4x recipesof Elisa's Vanilla Cake for Decorating, as per Craftsy.com, and love it. It's dense enough for bottom tier of big wedding cake but still light enough to be delicious.  The exterior developed a really nice caramelized exterior, a bit crunchy, that was really good. I'm gettingready to make Elisa's SMBC to fill the 3 tiers, and plan to finish coat the cakes with Inspired by Michele's White Chocolate Ganache, which is awesome.  I took Elisa's purse cake course on Craftsy, loved it.
