I started baking the cakes for my first ever wedding cake. I am mixing up the batter for the 14 inch cake and realize I didn't do my math right and that I will not have enough ingrediants to finish baking the rest. Okay fine, I would normally go to the store. But, my son has been sick all week and I have been taking care of him and trying to get everything organized. I shouldn't take him out. My husband is working late tonight and won't be home until much later tonight. Then I have to go to the store and buy everything in the wee hours of the night. Someone will be available to watch my son. Okay, I know not a huge problem, but icon_cry.gif !
Thanks for letting me vent and keep good thought for me that this wedding cake turns out fine.

How frustrating! I know all about those late night trips to the store. I hope things get better and you don't have anymore problems with your cake. thumbs_up.gif

I'm so sorry that you are having all of this stress. Doing a wedding cake is enough stress as it is, and the baking part is the worst! Once you finally get that part over with , then comes the fun stuff! I think the decorating part is the best!
OK, I know I'm rambling on, but I was hoping that by the time you read all of this, you may have calmed down a bit!

for a cake that large it should have more then one nail hun maybe 3 or even 4 nails icon_sad.gif I hope things get better for you and I hope you son gets well soon! icon_smile.gif

I put more than one nail in it and thankfully it finished cooking with out damage now it is whating to cool and hopefully it comes out with out problem.

wow! Good luck on your baking tonight. The clerks at walmart have seen me in my PJs (look like sweatpants)....so many times they've started to guess what kind of cake I was baking based on the spots on my clothes (usually chocolate!)

Also...just a suggestion..something I did with my last 14" cake - instead of baking one large cake and torting, I divided the batter and made each layer separately. I didn't use the nail and didn't have a problem..although my layers are always rather thin.

Best of luck - hope the little one is feeling better.

I know how crazy it get when you are baking and something happens to ruin you baking stride. Hang in there. Hope things work out for you. I,ll be looking for the picture.

I am making the layer seperatly. Thank Goodness. However one of my cakes has a dip in the middle. Any suggestions on how to get it level? Should I level that layer until the dip is gone. I can't bake another one.

Wow, the problems keep on going. I did the dishes while the cake cooked. After that I went to make another batch of buttercream and my buttercream is grainy and I have no idea why. icon_cry.gificon_cry.gif Does any one know what to do?

Pink as far as the leveling hun I would just take a dish towel (clean of course lol) and press lightly on the top hump until it is level with pan or level with the rest of the cake. Sorry I'm late getting this info to you.

As for the grainy butter cream never had that problem so I'm sorry I don't know the answer to that one icon_sad.gif

As long as you measured the sugar correctly, I can only think that you didn't scrape the bowl down during mixing? I always stop a couple times and scrape the sides and definately the bottom of the bowl, to make sure all sugar is beaten in.

Thanks for the help. I got the BC figured out. I think I just needed more sugar. I added some and it helped a lot. I finished the 14 inchers and now it is a new day for the rest of the cakes and me. Hopefully today will be better. I am sure I will be back with more questions though.

Well, it is Saturday and my buttercream is melting. Like goo on the cake board melting. I don't know what to do. I have to have this done tonight. I guess I am going to scrape of what I can I try making a different kind of BC, start over. icon_cry.gificon_cry.gificon_cry.gificon_cry.gif

Hey there! Sorry that your having such a rough time! I've had those days myself! I would suggest and perhaps it's wrong of me, if you can't get your buttercream right to go to the nearest Micheal's and buy a couple of buckets of Wilton's decorating icing and relax and be done with it! Is there a micheal's in Lincoln City? I live in Portland and we have quite a few of them. Hope it all works out, wish I could give some better advice!! icon_smile.gificon_smile.gif

The closest Micheal's is in Salem. No cake decorating palces here. I have to just try again. I hope this next batch will turn out and be okay!

What recipe are you using? Maybe I could help a little better if I know what your using. Is it all butter or half butter half shortening?

The one that meltied was all butter. Now I amking one with 1/2 butter and 1/2 shortening. I have never had any problems with that one.

Finally got the cake done! It looks great I will have pictures soon. I still have to take it to the reception. I hope that one works out okay. We have a high wind warning in affect but, that is not until later this afternoon. I let you guys know how it goes.

The cake made it! I finished it and here it is! My first wedding cake. Buttercream raspberry and barvaran cream filling! The bride loved it!
