Do you charge the same per serving for a TT cake that you charge for other tiered cakes or do you charge more?

I charge a little more since it is harder to work with. And how much more, well, depends on the detail of the decorations and if using fondant or BC.

oh, one more thing ~ do you deduct any servings for the cake you cut out for the tiers to sit flat?

I would definitely charge more... anytime you have to sculpt a cake, especially one like the topsy turvy cakes, you need to have additional charges for them. There is a lot of work that goes into those.

mmm.... good question, I would calculate how many servings I may get from the new shaped cake and charge based on the new number of servings... so I guess YES, I would deduct a little since it will serve less people. HTH

Oh, my starting price would have to be a thousand bucks. I have made just one, the one in my avatar and they are such a lot of work. Crumbs everywhere!
