Have any of you tried that recipe? I am looking for a really good one. I keep ending using recipes that taste like sweet cornbread.

When I make cupcakes, I just use an all-in-one sponge cake - all the recipes for cupcakes I've tried come out way too heavy. Here's what I use:

8oz self-rising flour
2 sticks butter
8oz fine sugar
4 eggs
1 tsp baking powder
1 tsp vanilla
1/4c milk or buttermilk

Mix everything together on medium speed, beating until smooth and very well blended (at least 3 minutes). The mixture should be of a soft dropping consistency, if not, add a little more milk. Divide among cupcake papers by using an ice-cream scoop and bake at 375 for 20-30mins, until golden brown. For chocolate cupcakes, substitute 1oz of the flour with cocoa powder and add 1oz of melted unsweetened chocolate.

These are moist, delicious and will make about 18 regular cupcakes.
