what kind? finger foods only? hot foods? sandwiches? canapes?

My Appetizer Table has veggie trays, fresh fruit, cheeseball and crackers, sliced cheeses/summer sausage/crackers. Brides can add meatballs (buy 'em frozen from GFS, cover with sauce of choice ... BBQ, brown gravy, marinara, sweet-n-sour); chicken skewers - cut chicken breast into strips, cook and put on skewers, add sauce of choice .... teriyake is the most popular for me in these). Cold peeled shirmp with sauce.

I do things the simple way.

For a shower or something, I recommend cucumber sandwiches. They always go over big when I make them. Just soften some cream cheese, and add chopped green onion, couple of tblsps. of mayo, celery salt and garlic powder to taste. Then spread mixture on a sandwich and add sliced cucumber. I cut off the crusts and cut into fourths.

those cucumber sandwiches are good on those small round rye breads, too! The small breads tend to go dry pretty fast, so lay a damp (almost dry .... but damp) paper towel over the top of the tray of sandwiches, then wrap in saran. They will stay nice and fresh/soft.

A good one is to take fres jalepeno peppers, cut the tops off them and seed them, leaving them whole. Then stick a peedled raw shrimp with the tail left on sticking out of the top of the pepper. Wrap in a piece of bacon and secure with a toothpick. Either bake them or grill them.

You can also subsitute a piece of cooked chicken breast instead of shrimp and also put a piece of cheese in there with the shrimp or chicken.

No matter how many I make, there are never any leftovers.

I've got a shower I'm giving in 2 weeks so I'm going to do the cucumber sandwiches. They sounds gooooood!

EASY Crab Dip:

Soften 1 package 8oz. cream cheese
Spread in 6-7 inch square, decorative dish
Open 1 small can crab meat and drain well
Spread crab over cream cheese
Open one bottle of favorite cocktail sauce
Pour over crab and spread evenly
Insert spreader and serve with wheat rounds


Refrigerate if not serving until later. When ready to serve allow 30 minutes out of the fridge to allow the cream cheese to start to soften.

little weiners wrapped in bacon cooked in a crock pot with brown sugar.

Very good and very bad for you.

When I make these it's always the first thing to go go go!

For this time of year, I usually make crab stuffed cherry tomatoes..... just cut the tops off, scoop out the seeds and let the rest upside down to drain a little. While they are draining, make a stuffing out of crab meat, ( you can even use the immatation.) I don't really have a recipe written down, I just use softened cream cheese, a little mayo, a dash of Old Bay Seasoning, a little parsely, and you are set to go... really easy, but it looks like it took FOREVER.......

Bacon wrapped club crackers:

Just like the name says....wrap bacon around the club cracker!

Wrap, put on parchment lined sheet and bake until bacon is cooked!

Never have any leftover!

this is a dip recipe i got from a co-worker a few years ago. i tried it before i knew what was in it. the ingredients sound weird together but it's great with crackers

2 8 oz. pkg softened cream cheese
chopped green onions to taste (i use3-4)
diced bell pepper to taste
a medium can crushed pineapple
lowry's season salt to taste

i also have a meat ball recipe that you can just throw in the crock pot from semi-homemade and lots of other cheeseballs and dips. pm me if you want any of them!

i like appetizers better than a real meal!

Proscuitto wrapped asparagus. Rachel ray did it on Oprah. It is so yummo as she would say. Sometimes we just make it up and eat t as a meal! paper thin proscuitto, spread some garlic herb spread (I like Alouette) wrap it around a blanched asparagus spear.

I love this recipe (from Allrecipes.com) but I do not add the sugar because the preserves make it sweet enough. Use whatever fruit you like...

Annie's Fruit Salsa and Cinnamon Chips

INGREDIENTS

* 2 kiwis, peeled and diced
* 2 Golden Delicious apples - peeled, cored and diced
* 8 ounces raspberries
* 1 pound strawberries
* 2 tablespoons white sugar
* 1 tablespoon brown sugar
* 3 tablespoons fruit preserves, any flavor
*
* 10 (10 inch) flour tortillas
* butter flavored cooking spray
* 2 cups cinnamon sugar

DIRECTIONS

1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2. Preheat oven to 350 degrees F (175 degrees C).
3. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit and spice mixture.

Oh! this is good too. Easy dip that we love! Ranch dip, pour in a jar of bacon bit, chives, cheddar cheese. So good!

Here is another...it was posted on another site (no name)
I like it with graham crackers and you can always "roll" the in whatever you like like crushed butterfinger bars)

Chocolate Chip Cheese Ball

1(8oz) package cream cheese, softened
¼ Cup butter, softened
¾ Cup confectioners sugar
2 Tablespoons brown sugar
¼ teaspoon vanilla
¾ Cup mini semisweet chocolate chips
½ Cup heath toffee pieces
¾ Cup finely chopped pecans

In a medium bowl, beat together cream cheese and butter until smooth. Mix
in confectioners sugar, brown sugar and vanilla. Stir in chocolate
chips & toffee pieces. Cover and chill for 2 hrs.

Shape chilled cream cheese mixture into a ball. Wrap with plastic wrap, and
chill for 1 hr.

Roll the cheese ball in finely chopped pecans before serving.

Easily doubled or tripled.

Serve with graham crackers, vanilla wafers, sugar cookies, etc.

I won a cookoff this year using this recipe...the men especially all loved it!

Sweet 'n Spicy Chicken Bacon Wraps

1 1/4 pounds boneless, skinless, chicken breasts (about 4 breasts)
1 package Smithfield thick sliced MAPLE FLAVORED bacon (from Sam's Club)
2 cups firmly packed brown sugar
6 to 8 tablespoons chili powder (depending how spicy you like it!)

Preheat oven to 350 degrees F.

Cut chicken breasts into 1-inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together brown sugar and chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with nonstick cooking spray. Place chicken wrap on rack in broiler pan. Bake 350 for 30 to 35 minutes or until bacon is crisp.

I love using phyllo dough for great finger food. I've done them with potatoes, sour cream and leeks mixture also with mixed mushrooms and beef flavoured rice. Just buy the frozen phyllo sheets. Peel and cut potatoes in small cubes and boil till tender. Fry leeks in butter. Let both cool and mix with sour cream, salt and pepper to taste. Roll out first sheet of phyllo brush with olive oil or butter or margarine add another sheet and continue with butter till you have done 4 sheets. cut sheets in half then in 2 inch strips put a small amount of filling and fold over into triangles. Place on a lightly oiled cookie sheet brush with butter whatever your using and bake at 350 For the mushroom and rice I cook my rice then I fry variety of mushrooms in butter add to the rice mixture and follow the phyllo directions as above. When I am doing more than one type I make some in squres some in triangles looks really nice. You can do alot of different kinds just use your imagination. You can do chicken salad in them or shrimp and spicy rice. Great thing is they can be made in advance and frozen then pop them in the oven at 350 and bake.

Puff pastry is also a great tool for making quick, impressive appetizers.

Spread a light layer of pizza sauce, Parmesan, and pepperoni on a sheet of puff pastry. Roll into a long tube. Slice into disks and pop in the oven for a few minutes.

Cut puff pastry into either squares or circles (if you're feeling fancy). Fill with a filling (get creative!) and make little turnovers. I like sausage and Parmesan with fresh herbs a lot. Another favorite is Gorgonzola and sauteed apples.

This is my family's famous cheeeball recipe. I have to make this anytime I have people over or else they get mad. Seriously I have had people yell at me because I didn't make it. icon_lol.gif

Super Easy Cheeseball

3 8 oz packages of cream cheese softened
2 packages of powdered italian salad dressing mix
1 large summer sausage cut up
dried parsley

Mix the cream cheese and the italian dressing together in a bowl. I've found it mixes a lot easier with a hand mixer. Roll cream cheese mixture into a ball and roll in the parsley. Wrap in plastic wrap and put in the fridge to firm up. Serve with the cut up summer sausage and ritz crackers.

If you didn't want to make it into a ball you could leave off the parsley and put it in to a bowl instead.

Anything wrapped with BACON,works for me!!

This is super easy.....
Take a box of stove top stuffing ,make as directed,let cool.
Then form into little bite size balls and wrap with a half piece of bacon,tooth pick them and toss in the oven till bacon cooked.

Make up some dipping sauces such as bbq sauce,seafood cocktail sauce.....ect...

These are always a hit and the first to go!

Here's another tried and true appetizer I always make and have given out the recipes several times. More bacon..lol

Spinach Roll-Ups(from Allrecipes.com)

INGREDIENTS
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 (1 ounce) package ranch dressing mix
1 cup mayonnaise
1 cup sour cream
1/2 cup bacon bits
3 tablespoons chopped onions
10 (12 inch) flour tortillas
DIRECTIONS
In a medium-size mixing bowl, combine spinach, ranch mix, mayonnaise, sour cream, bacon bits and onion. Spread the mixture onto each tortilla and roll it up. Refrigerate the rolled tortillas until ready to serve.
Slice each roll-up into 1 inch servings no more than 3 hours before serving.
