I have found that no matter what brand of cake mix that I use, the German Chocolate cake always falls apart. Every last one of them, every last brand of them. Does this happen to anybody else? I need a good scratch recipe for german chocolate seeing as I will never try it from a box again.
I use DH German Chocolate mix, but a trick I learned from my mother, is to add a box of melted german chocolate to it (The "bar" of Bakers German Chocolate). It really makes it moist and good and helps the texture. I also add buttermilk instead of water to the mix.
I even tried to use the doctoring method....still didnt work. I dont know why. Every last one breaks in half or more parts. Most break when i take them out of the pan. Some when i move them form the cooling rack. Some even after they have been frozen, they just snap in half to the touch. WTF! lol The farthest I have been with this cake is to the crumbcoat, and then the stupid thing fell out of the fridge when I opened it to do another coat of buttercream. Arrghhh! I was so mad. I was fine when it went in there. Had the whole top shelf to itself so it was pretty darn in there. I think it planned on jumping out and onto the floor. How the H--L did this happen? Why would a cake do this to me? Hmm....maybe cause I dont like german chocolate cake, hate the frosting with the coconut and stuff.... Maybe as the dying wish of the first cake (cause I didnt eat the rest of it and let it go stale cause I didnt like the taste), it told all the other cakes to just break and kill itself instead of being wasted by me. lol
