I did an experiment using Eggbeaters instead of whole eggs in the NFSC.

I made the dough about a month ago and put it in the freezer. Just made them this weekend and they came out great, just like the regular ones.

They taste great too. I did still use butter.

I was always wondering if it would work. I always have Egg beaters in the house more than regular eggs.

Thank you for the tip!! Your cookies all look so beautiful, I can make fondant cakes but I am having such a hard time doing the cookie frosting, it's very upsetting.

Thanks for that tip...I always have eggbeaters and not eggs in my fridge too! I love to make lots of cookie batches, different kinds, and then freeze my dough and make it when I need a gift or just want to munch on something sweet (too often, but hey).
