Adding Carrots To Carrot Cake Mix

Hello all!!
I was just wondering if anyone uses a carrot cake mix but adds your own carrots? I have someone coming over next week for a wedding cake consult and they want to try my carrot cake. I'm just worried the Betty Crocker mix I use it not "carroty" enough. It is a carrot cake mix but I think it just has dehydrated carrot bits in it. I was wondering if I added maybe 1/2 cup of grated carrot, if it would make a difference.
Any help you can give me is greatly appreciated,

I can not offer anything here, but am curious to see input. This is one cake I have not been able to do from a box, only scratch.

I add carrot baby food and cut back on the liquids in the mix icon_lol.gif

the cake mix doctor has a carrot cake recipe that starts w/a yellow mix and also includes fresh carrots, although I haven't tried it I've liked all the recipes I've tried. Also you can buy pre-shredded carrots which is more expensive but a great timesaver.

I have used that mix and added about 3 cups of carrots and 1/2 cup of pecans and it tasted great. The "carrots" that are in the mix are virtually undetectable. I can e-mail you the exact recipe that I used - it is from the Cake Mix doctor. Just PM me if you would like it.
