Does anyone have a recipes for a yummy apple cake that uses a cake mix and fresh apples.

I have a recipe that uses canned apples, but it really didn't have enough apple flavor for me. icon_sad.gif

I made a fresh apple cake over the weekend using a yellow mix. I added 1/2 cup sour cream and 1/2 box instant pudding, 1/2 cup buttermilk, 1/4 cup oil, 4 eggs and 3 cups chopped appples, 2 tsp cinnamon. Baked at 325 in a bundt. It was pretty good.

Here's a scratch one from my childhood that a neighbor made that is really good:

FRESH APPLE CAKE


1  cup cooking oil
2   cups sugar  (I use 1 2/3 white and 1/3 brown)
3   well beaten eggs
3  cups flour
3  cups chopped fresh apples
1   tsp soda
1/2 tsp salt
1 1/2  tsp cinnamon
2  tsp vanilla


Combine oil and sugar. Add eggs. Sift dry ingredients.
Add to 1st mixture. Add vanilla and apples.
Bake in loaf pan 55 minutes at 300 degrees.

Bake in bundt or tube pan or 2 loaves.

I have one from my mother. She used to make this all the time! She always saved it for the one snow we would get every year!

1 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1/4 cup shortening
1 egg
1/4 cup milk
2 1/2 cups peeled, cored apple slices

Topping:
3/4 cup light brown sugar, packed
3 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

sift together the flour, baking powder, salt, and granulated sugar. Add shortening, egg, and milk; beat until blended
Spread this batter in a greased and floured 8-inch square baking pan.
Arrange apple slices over the batter, sharp inner edges down, overlapping as needed.
Combine topping ingredients; sprinkle over apple slices. Bake at 375° for 40 to 45 minutes, until apples are tender and topping is browned. Serve warm with ice cream or sweetened whipped cream.
