Here you go --- suggestions please!

I have a bride who wants a cake for her wedding so she can shut her mother up and have a cake on the table. She hates cake! Does not care what kind of cake it is - what it looks like - what color I use - and what flavor I choose. Mother refuses to make the decision about the cake.

It needs to feed about 200 people. I am not going to get all creative and make different layers of flavors. What kind of cake should I make to appeal to most people?

I know it seems like a dumb question - but I can't make up my mind. What is your most requested flavor?

If no one wants to commit, what's your most requested cake combination.

I like:

White cake with raspberry filling and creme bouquet hi-ratio buttercream.

Could you make the top tier a rice crispie treat or something that they bride will eat? Anyway, i would do a white cake, very simple and appeals to the masses. icon_smile.gif

Yellow cake (the Durable Cake for 3D and Wedding Cakes recipe on this site is quite good) with lemon cream cheese and strawberry filling.

Why have white cake when you can have yellow? Yellow has much more flavor. icon_biggrin.gif

Hmmm! You are obviously not going to impress the bride with your creativity, so why not go for the WOW with the mother and all of the other guests? You can't go wrong with white cake - I like the sound of JanH's suggestion! And maybe a second flavor like carrot cake. (I like to put LOTS of english walnuts in mine and fill with cream cheese frosting). Chocolate is too hard to cover well with white or ivory icing. I would make the decorations very simple and elegant - that will appeal to practically EVERYONE!

I get more requests for white cake than any other flavor. I would definitely go with white.

Just a simple yellow or white cake with butter cream filling. A lot of people hate raspberry, strawberry and chocolate, beleive or not!

I had a bride who also didnt want a cake and her mother insisted. So we did cupcakes. It turned out to be quite fun!

I just did a favorite this past weekend. It is a lemon cake with a lemon buttercream icing. It was a hit with everyone...children and adults alike. I walked around and looked in all the trash cans to see if people were eating it or throwing it away and found very, very little cake still on plates in the garbage. If there was any, it was a very small piece left. It is such a nice density cake with a clean, cool flavor.

How about those stacked cookie cakes?

Might be fun to use them for the wedding cake.

I guess I would keep it relativly simple but... I would be tempted do do "my best cake "(meaning the combo you personally do best) as there are a whole lot of potentials out there too !!

I would probably do a regular white cake and if you are using buttercream I wouldn't use a different filling. It is hard to know who likes what types of flavors and since she doesn't care then make it more friendly to more people.

Like me I don't like raspberry filling. It made bad for me at my best friends wedding since that is what they used in hers, so I just picked around it.

I'd do a lemon cake w lemon filling, and a yellow cake with a fluffy twinkie like filling
and ice in buttercream...should cover most people...

Whatever you do, coiuld you do a little something special just for her? even if it is seperate? She would probably really appreciate the extra effort....and spread the word!!

Try to find out what kind of dessert she DOES like and make a mini version of it.

Personally, I prefer a butter cake. We had a butter cake with caramel filling and BC icing. I got RAVE reviews from my guests that it was the best wedding cake they had ever had.

Well, the bride usually is so involved at the wedding she doesn't get to eat any cake anyway, so definitely the idea of impressing the mom and the guests is the way to go.

Don't consider it a "nothing" cake because the bride doesn't like cake, as mentioned before, there will be many potential customers enjoying your cake. Show them your stuff! Janice

I'd do the white cake with buttercream filling. Make it simple yet elegant. As for the bride what is it that she does like? Pie, Ice cream, Cookies, ??? I'd try to make a small dessert to add to the finished cake. I had a cake to do for a party but one of the guests couldn't eat cake so a made a small "cake" with a cookie crust, icecream "cake" covered with fondant and decorated in the same fashion as the rest of the cake. It was a huge hit!! One of the guests asked me to make a cake for a party just like the icecream "cake"

I went to a wedding where they had no cake and just pies. There were probably twenty different pies. they were all arranged on different levels with flowers around. It was quite unique.

Everyone's given great ideas, but did anyone ask the groom what kind of cake he likes? It might be a way to get started. Just a thought.

Yellow is my biggest seller. Of all the cakes I've done, only about six are different flavors.

People here just love that yellow cake icon_lol.gif

Whomever is paying for the cake is the one that I would work with. Make it simple with stacked or tiered with some Cornelli Lace, Scrolls and MMF beads as the borders.

I would say , what about the groom ? it's his wedding too.. I'm sure he has some kind of authority if the bride refuses to deal with the cake..

Who ever is paying, that's the person I would ask.. if all else fail,
make a white cake w/ vanilla cream filling or plain buttercream..
a flavor that is somewhat generic. Is the bride on a non-fat strict diet who is a Super Model type ? Or is she one of those healthy eating thumbsdown.gif vegan type who avoids every fabulous food found on planet earth ? and is paranoid of fat ? OR maybe make flap jacks !!! an eat all they can pancake reception. icon_cool.gif

If I wasn't already married I would think you were talking about my wedding! icon_lol.gif DH and I don't care for cake (for eating anyway) and were planning on having pie. My mother just about died. Our compromise? We had a small, 8" cake so we could do the offical cutting and then we all ate pie. People who didn't want pie could have cake. And mom was happy since we did the offical cake cutting and feeding thing.

So maybe the bride would want to do a desert bar and have a small cake to cut and appease her mother with? Just an idea. icon_lol.gif

I would go with marble, white buttercream with white roses. I love this look and it is pretty neutral for all involved.

I would use this as an opportunity to do something different. Something that you have wanted to do but never had the opportunity.

i just think it's sad that parents can't but out of the kids' wedding. It's their day, not mom's!! Let the bride have what she wants!

Anyway, I think it would be nice to do somehting for the top tier the bride will eat. Good luck!

My vote would be for white cake. My personal favorite is white cake with triple-berry filling. It's my most requested cake and filling combo.

My most requested flavor is alternating yellow and chocolate cake with whipped chocolate ganache filling. Everyone LOVES it and tells me how moist it is. Does the bride like cheescake? I saw where they had a cheesecake for a wedding. I can't remember if they frosted it or had fondant on it but if you were to just look at it, it looked like a beautifully decorated cake.
