What's Confectioner's Sugar?

HI,

I have seen confectioner's sugar in recipes. I haven't use this before.

IS that called a different name in Australia? I have only seen icing sugar or icing mixture - could this be one of the other names for confectioner's sugar?

what's the difference between the 2?

It is called Confectioners sugar here in Canada but it is the same as icing sugar,Powdered sugar.

Do you mean what is icing sugar made of??? Corn starch and powdered sugar...

Confectioner's Sugar is the same thing as Icing Sugar icon_smile.gif

Confectioners sugar is called Icing Sugar in Australia. The Soft Icing Mixture is a little different. I think it it used for glace icing. I don't think you can use it for royal icing. However, I have been known to be wrong. He! He!

Oh, i get it. Confectioner's sugar is icing sugar. ok. Love to find out hwat exactly icing mixture is though (in Oz)? so many different terminology - it's confusing. thanks everyone!

Hi...icing mixture contains a small amount of cornflour (as an anti caking agent) and icing sugar is just the powdered sugar...it always needs to be sifted, you will find it is quite lumpy as opposed to the icing mixture which has no lumps in it... :-)

Confectioners sugar aka pure icing sugar is used for royal icings etc. Soft icing mixture has starch added to stop it clumping, you can really only use it for glace icing. It's not very useful, I always only use the pure icing sugar.
