This is what I use in my Chocolate Peanut Butter Explosion Cake :
8oz Cream Cheese
1/2 C. Creamy Peanut Butter
3 C. Powdered Sugar (give or take a little)
1/4 C. Whipping Cream

Suzie, do you use that filling with a chocolate buttercream or ganache on the outside of the cake?

I am making a character cake for my son's birthday using chocolate cake. I can't use chocolate buttercream because of the decorations - do you think the peanut butter mousse/chocolate cake combination would do well with plain vanilla buttercream, or maybe cream cheese buttercream?
