I have a request for a strawberry cake with white chocolate icing. I believe it will have to travel, so it needs to not need refrigeration.

As was mentioned you can add chocolate, white or regular, to your regular buttercream recipe. Start with about 3oz for a 3 cup batch of icing. You can add more you want more of the white chocolate taste. You may need to add a little extra water to the recipe, but it should work just fine. icon_smile.gif

Thanks, I have only added cocoa to get chocolate frosting, I didn't know you could add melted chocolate. Will this be of a good consistency for decorating? They want the 3-d duck so I'll have to make a million (or so it'll seem) stars to cover it.

Rose Levy Berenbaum also has an all white chocolate recipe called Creme Ivoire, I believe, which is literally just white chocolate and one other ingredient...I'd have to look it up...

I use her cream cheese white chocolate bc, but that needs chilled.
