Frosting - Not Overly Sweet - For Doll Cake

Any suggestions on a frosting suitable for a Wonder Mold Doll Cake that will not be so overy sweet and hard like traditional buttercream?

Also, what are the pros/cons of having the frosting NOT get hard like the buttercream does? Will this alter the way a cake is decorated?

I want something that I can put in the pastry bag, won't melt, and gives a light sweet taste that doesn't harden.

Have you tried Wilton's extra special buttercream?
It's on their website and isn't a whipped icing but isn't as sweet as regular buttercream. It doesn't crust as hard as buttercream but will crust a little which will help for smoothing and I don't think it's quite stiff enough for roses but you can do all the normal borders and such.

You could also find an icing that you like and cover that with fondant, it drapes better for dresses.

The big con with an icing that doesn't crust would be that it might be harder to smooth and such especially on the bodice.

Thanks for responding!

You mentioned the fondant and I've never used that before. Is that something that is overly sweet like the regular buttercream? Do people generally eat that stuff? I can see that it will produce a smoother "dress" on the doll, but I should still put a more "edible" frosting underneath to enjoy better with the cake?

I'll check out the Wilton site for the recipe. I just didn't want a frosting that tasted so overly sweet, because no one in my family likes it that way. And then it gets so hard ("crusty") - very unlike a b-day cake you'd get in a bakery.

try the Italian Meringue buttercream recipe on this site........it's delicious, light, not too sweet , and a dream to smooth on a cake...........it also has a really pretty sheen to it........it won't harden unless you stick it in the fridge......but when it's put at room temp. it will soften again but you can still pipe roses etc. with it

You put frosting under fondant, some people eat it and others peel it off. I use MMF, there's a doll cake in my pics using it.

fondant of all types.....including MMF are extremely sweet IMO

I agree, I can't figure out why some people eat it. icon_lol.gif I do like to use it but make sure to put a good frosting underneath. icon_biggrin.gif
