I usually make whipped cream and add some expresso, but I want something a little bit more rich and creamy.

I have a great chocoalte cake recipe that uses coffee in it. Sorry I don't have a filling though. What about mocha ganache? (add powdered expresso to ganache...should be really yummy)

PM me if you want my recipe!

I made a cappuccino cake last summer using the chocolate cake from the back of the Hershey's cocoa container (you could sub coffee for the water, though I didn't do that). I filled it with coffee butter frosting from this site, which was too buttery for my taste and frosted with espresso ganache, which rocked. Here's the recipe from Rose Levy Berenbaum, via Food & Wine.com :

ingredients

* 18 ounces bittersweet chocolate, broken into 3/4 -inch pieces
* 1 3/4 cups plus 2 tablespoons heavy cream
* 1 1/2 teaspoons instant espresso powder
* 1 1/2 tablespoons Kahlúa

directions

1. Put the chocolate in a heatproof bowl. In a small saucepan, heat the cream until bubbles appear around the edge; remove from the heat. Add the espresso powder and stir to dissolve. Pour the hot cream over the chocolate and let stand for 1 minute. Stir the chocolate until melted and smooth. Stir in the Kahlúa. Let the ganache stand at room temperature until firm enough to spread.

I made a wonderfull yrich mocha filling by making the "bittersweet chocolate frosting" on this site and adding instant coffee to it. It was a great consistancy and the flavor was great. Good luck.
