I know it has been asked a million times
When can I make my halloween candy? I know not to put it in the fridge. If I put it in air tight containers and keep it out of the light, when can I make it.
I feel an itch coming on to melt something!
I asked a similar question on another site. I was told I could pretty much make the candy whenever because chocolate has a long shelf life. I was told to wrap the candy well, keep it out of the light and cold and heat. If you fill the chocolate, that will determine whether or not they need refrigeration. truffles tend to need refrigeration.
If you aren't adding something that isn't shelf stable once opened you can do it now.
You aren't altering the chocolate in any real way, just melting it and letting it firm up again, so it's not going to do anything that the unmolded candy will.
Keep in a cool, dry place and make sure it's covered for dust.
