I have somone that wants cream cheese on there cake but I am afraid that it will just slide off. I have seen on here that people do use it on hot days...any tricks? carrot cake is very popular recently and it's not cake without the frosting! icon_cry.gif

Is the cake going to be outside? If so I would not go with real cream cheese icing but a flavor from Lorains Oil's. If it is going to be inside go ahead and do it. No problem.

I have had the most hideous nightmare with cream cheese frosting and warm weather....a birthday cake I delivered actually melted on the 10 min. drive to the school and I ran the A/C in the van for a good 10 minutes before I even got in.... terrible. Tastes good but the only way to have it hold up is to decorate the night before and fridge overnight so it is nice and firm...but the minute it hits the warm air it will start to soften.

I would say it has to be fridged until about 10-15 minutes before serving and no way can it sit on a table in the heat for very long..... I always wondered if I could freeze my carrot cakes so they would last during the drive...hmm....
