I'm baking a cake for my friend's son. I asked him what type of cake he wants. He wants a chocolate cake colored red with lemon frosting. I thought, Red Velvet cake. I have a red velvet cake recipe but it calls for buttermilk. Could I get away with using soy milk? He's allergic to milk and all of its products.
Also, does anyone have a recipe for dairy free lemon frosting? My thought was to use a buttercream frosting and instead of butter I would use maragarine or soy margarine.

Here is a recipe for an excellent dairy free choc cake(I make all the time, very moist)

3 cups flour
6 tablespoons cocoa
2 cups sugar
1 tea salt
2 tea baking soda
2/3 cups oil
1 tea imitation vanilla
Place ingredients in a bowl in order. Then pour 2 cups of water over all ingred. and mix with a fork. Add a teaspoon of red wine vinegar and mix with the fork again. Pour into a 9X13 greased pan and bake at 350 for 30-40 minutes.
