the wedding cake we are doing is with a 6" 9" and 12" contour pan. They are 2.5 inches deep. We are not sure if the pans are coming with instructions or not sooooooooooo

Would you use a flower nail in the 12inch one to be safe??????
And i can only find info on the 3 inch deep pans as far as baking time and amounts of batter. Since it is 1/2 inch smaller would then subtract maybe 1/2 cup of batter and decresse baking time by maybe 5 minutes or are we way off here.

Hey susanmm23-

From my experience batter amounts and baking times vary on the thickness of batter and the oven. My suggestion would be to fill the pans 2/3 of the way up. I would definitely use a flower nail, it can only help. There is no way to know of the exact amount of time the cake will need to bake, I wouldn't even check on it until 35 minutes in and then just use a toothpick or test the cake with your finger to see if it springs back.

Susan,

I totally agree w/ Jess~ I always use a flower nail on cakes larger then a 10". I sometimes use them in a 10" depending on what kind of cake I'm making. I always fill my cakes up to the 1/2 way mark.

I bought an 8" contour pan Sat. My cake store didn't have any larger. I'll get them one at a time.

thanks guys we are totaly freaking out we have ummm a total of 10 cakes for these 2 cakes. hmm does that make sense? we are still waiting for our contour pans to be shipped to us. they should be here tomorrow morning. normally we would already have the cakes baked and in the freezer. Boy i tell you the things we do for our friends.

I totally know what you mean. I always find that I overextend myself for my friends and am later wondering why I do this! I'm sure it will be beautiful and please be sure and post pics!

oh dont worry i will sunday morning. our biggest fear is the pans wont make it in time. We wont be able to start baking until friday afternoon. thank goodness the wedding isnt until 8 pm saturday. it gives us a little more time.
