I just saw this recipe in Kraft's Food and Family magazine;
Carrot-Ginger Cupcakes
1 pkg. pound cake mix (16 oz.)
3/4 cup shredded carrots
1 Tbsp. ground ginger
1 tsp. ground cinnamon, divided
1/2 cup walnut pieces, toasted
1 pkg, (8oz) cream cheese, softened
2 cups Cool Whip whipped topping

Preheat oven to 350. Prepare cake batter as directed on pkg; stir in carrots, ginger, 3/4 tsp cinnamon and walnuts.
Spoon batter into 24 paper lined medium muffin cups. Bake 15 min. pr until toothpick comes out clean.
Beat cream cheese in medium bowl with wire wisk until smooth. Gently stir in whipped topping. Spread over tops of cupcakes. Sprinkle with reserved 1/4 tsp of cinnamon. Refrigerate until ready to serve.
Makes 24 servings

I haven't tried this yet, but I plan to. Good Luck!

That sounds yumm-o! However I guess I should've also mentioned that I'm looking for a scratch recipe. D'oh!
