Crunchy Icing...help!!!

I have a potential customer who is asking me about a crunchy buttercream icing?? She said a lady used to make her cakes made this icing (she no longer makes cakes or has moved?). I asked her was it the decorations thinking she was talking about royal icing but she said no the whole cake is covered in it. Does anyone have any idea of what type of frosting she is talking about. She also said it's not a very sweet icing! Help please!!!!

Maybe Crusting, but I never heard of crunchy!
I'm like you, the first thing that came to mind was royal icing.

She MUST be referring to a crusting buttercream.

The scary sounding thing about it being crunchy---it makes you wonder just how long those cakes must have been setting out before delivery.icon_confused.gif

It may very well be royal icing. They ice cakes with it all the time in Europe. It is not as widely used for icing cakes in the US, but I've seen some beautiful cakes make by European bakers with Royal icing.

Thank you cindy6250!! I must confess I have become a CC addict!!! Any free time I get I find myself surfing this site!!!

I thought is might be one of the crusting buttercreams too but I have never tried any of those. I have done the crusting cream cheese recipe from this site - but I wouldn't say it is crunchy!!

Makes me wonder how long the cakes were left to sit out too make the icing crunchy!!!

I'm not sure what to tell my customer. I hate to turn down an order but I'm not sure what they want??!!!

Why don't you ask her a few more questions?
Ask her if she is referring to a crusting buttercream which firms slightly on the surface. She may have just mixed up the word crusting with crunchy.

could it be not buttercream, but instead one of the old-fashioned style boiled frostings, which do crust and become kind of "crunchy"? icon_confused.gif

I checked with the customer again and she said all she could remember was it was crcnchy...not to sweet and she loved it.... icon_confused.gificon_confused.gif

She also said she could not remember if it was crunchy on top and soft underneath or not...she just remembrs crucnhy??

I guess it could be a boiled icing instead of buttercream....I have never trieda boiled icing recipe?? Anyone havea ny advie about the boiled frostings??

I am supposed to call her back today so any help would be appreciated!!

Here is my mom's recipe.

Mom's Fluffy Seven-Minute Icingicon_smile.gif

In a saucpan
Combine-- 1 cup sugar
1/3 cup water
1/4 teaspoon cream of tartar
1/8 teaspoon salt
Bring to a boil, stirring constantly until sugar dissolves.

In a Mixing BowL
Add--2 egg whites
and begin beating, slowly adding the hot syrup as you go.
Beat constantly at high speed until very stiff peaks form and mixture has a very glossy sheen. (About seven minutes)
Beat in 1 teaspoon vanilla.
Ices the tops and sides of two 8-9 inch layer cake or a 10inch tube cake.

My mom always made 7 minute icing for her angel food cakes. I don't ever remember it being crunchy-just sticky like marshmallow fluff. I wish I had a suggestion for crunchy icing-I wouldn't want it!
