I just got married in May. Our wedding cake had strawberry cream filling and key lime filling. The key lime was ordered specially for my husband, but he didn't get any. I thought it would be nice to bake him one.

Does anyone have a recipe for a key lime filling? It tasted like he just added some flavor to his normal cream cheese buttercream.

If you don't have a recipe, any ideas on what to use for the flavoring? I thought jello may be too sweet.

If you can't find key limes, you can buy the juice bottled. I use it in cheesecake, all the time.

just replace the liquid in a small batch of buttercream with all or part juice.

You could also make key lime curd and blend that with your icing.
