Need Suggestions For A Filling

Okay i have a cake to make at the end of next month ( i know long ways away) The husband ordered the cake for his wife's birthday. Every cake they have ordered from me they have completly left up to my decison on the decorations, flavors, size, etc....Usually i make them a white or yellow cake with a layer of strawberry filling and cream cheese filling, then covered with BC b/c i know they absoulutly LOVE these flavors together....well this time i wanted to make them something different with different flavors. I want to use a crusting cream cheese frosting, decorate with chocolate ganache and then place Chocolate Covered Strawberries on the cake also. But i'm not sure what flavor of cake or fillings to use.....Any suggestions???? They are kinda older people, so nothing tooo sweet.( i think i'm pushing it with the ganache as it is...)

If you are using the crusting cream cheese frosting from this site it is excellent! I recently made a cake from the DH box mix called cinnamon swirl! That was very good! Not too sweet and I made a orange cream cheese filling and covered the cake in crusting bc.

I think if you do something with the cream frosting you do not need the ganache. And if you are doing the strawberries on top then you could do a lighter chocolate cake or even lemon! Just a thought!

Good luck deciding! Hopefully someone else has suggestions!

The white almond sour cream cake is exellent with strawberry filling and cream cheese (plus the ganache too) --I actually use the WASC now for my strawberry shortcakes and people love it---

lemon and strawberry go very well together and so does orange and strawberry.

I don't think I'd go with ganache personally if you don't want it too sweet. If they like peanut butter, I've used the following recipe as a filling with cream cheese icing. It was too much for me as a frosting...but just right as a filling and it is wonderful on either chocolate or butter cakes (or your finger). icon_eek.gif

for my niece's graduation I made a chocolate cake with Rasberry Mouse filling and cream cheese icing. It was also a good mix of flavors.

How about a red velvet cake? I make one with the crusting cream cheese bc from this site, and it is AMAZING.

hmmm i like the strawberry and lemon combo, or the raspberry and chocolate....so many options....maybe lemon cake with strawberry filling, crusting cream cheese frosting and then the ganache...ands trawberries on top.

i know some of you suggested not using the ganache, but i only want to do a small border and write happy birthday in the ganache, so i don't think that will be too much sweetness for them....

never tried the White Almond Sour Cream cake....i can't really imagine what it tastes like...does the flavor reasemble at all the like the wilton almond flavoring add to BC frosting?....just wondering b/c i'm not a fan of it...

You have to try the WASC cake! It is really delicous. I used it for a shower cake a couple of weeks ago, and every person told me how delicous it was. And the Bride is using it for one of the wedding tiers. I use almond flavoring in my buttercream, but I think that the flavoring in the cake is more subtle. You could also, use another flavoring, in place of the almond, or try cutting back on it. Good luck!
