I was wanting to make some chocolate pina coloda mints for a baby shower I was just wondering if anyone had a good recipe for that. I also have some champagne flavoring would that make a good mint? TIA

All I do is make my usual Cream Cheese icing recipe and add a few drops of mint oil to it and it has an awesome flavor....Learned that from a Southern Living magazine recipe years ago that my dentist gave to me. She wanted me to make the cake that was on the cover of the magazine, it was a swirled Red Velvet and Vanilla cake,w/Cream Cheese icing on it, both recipes had a few drops of mint added to the mixes...After that she ordered 2 of those cakes a year from me, I also crushed mints in a plastic bag and sprinkled onto the cake icing top and sides..it tasted and smelt so Heavenly!

I did cream cheese mints for my wedding 12 years ago, and the were really easy and great tasting. You can change the flavors and colors, which was great and the easily fit into the molds for chocolates. YUM icon_biggrin.gif
