Enhanced Or Doctored Cake Mixes

I tried, for the first time, a doctored cake mix recipe using butter instead of oil.......
It looks awful!!!!!!!!! It's much crumb-ier (if that's a word) than a cake used with oil. It didn't bake as pretty as a regular mix--the middle didn't rise as high as the sides, which is completely opposite of what usually happens.

So.....just a word of caution.

Also, I'm open for advice if anyone has any icon_smile.gif

all i have tried is adding the box of pudding and extra egg....and my family went nuts...said it was the best cake i had ever made...

Wow, thanks for the 411. I've never used a doctored mix yet. And i've never used butter instead of oil. Dont think I will either LOL

What recipe did you use? I use the super enhanced on CC and have never had a problem. What else did you add? Maybe with some more info. we can try to figure out the problem. Sorry it does not look as expected, does it taste good?

I just did my first extender.....very good tasting, but I had lots of air bubbles under the top crust. So I guess my suggestion is to tap the pans and get all the air out!

I am always nervous about "changing" recipes. I guess that I just don't have enough confidence to do that, but that is how great discoveries are made!
