When I was a little girl learning how to bake, my late great aunt gave me a cookie recipe that was made from a cake mix. It was easy measurements with real simple instructions. I want to say it was the same ingredients as the cake just different amounts. I would love for my Girl Scouts to make these cookies to earn their cooking badge. My mother lost this recipe years ago. I think it was published in a church cookbook. THanks a million.

Sorry it's been so long to get back with you , but have been busy cooking for our family Labor Day bbq.
THe recipe that I'm looking for was called something like quick cookies, or fast cookies with nothing else added in but what was originally in the cake mix stuff. All that was different was the amounts. I do remember the cookies rising real well. But I'll take any recipes that I can get to make at home with my girls. Please share.

Here is how I do it, and they are YUMMY and EVERYONE always asks for the recipe icon_biggrin.gif

1 box cake mix (devil's food is good...spice cake is YUMMY)
1/2 cup oil
2 eggs

Mix...it will be very dough-like.

Drop by rounded spoonfuls and bake at 350 for about 10 minutes.

Why on earth would you be teaching girl scouts to make cookies with cake mix?

Cookies from scratch are easy to make (get a bowl and a wooden spoon and go to town, no special equipment needed) and hard to mess up.

My recipe is very similar to 4Gifts4Lisa's:

1 box cake mix (lemon, devil's food, spice, or banana all are good)
1 stick butter (1/2 c.), softened
1 or 2 eggs (1 for crunchy, 2 for softer)

Preheat oven to 350 degrees.

Mix all ingredients well. If you want, add 1/2 - 3/4 cup chopped nuts or mini chocolate chips. Drop scant tablespoonfulls on parchment-covered baking sheet. Bake until set and browned on edges. (Usually around 10 minutes, but may vary a bit.)

I have had a lot of requests for these cookies. One very popular variation is spice cake mix with diced dried apples and extra cinnamon. Another is the banana cake mix with finely chopped candied ginger.

Yes, scratch cookies are easy, but you can't beat cake mix cookies for simplicity and for not having to worry about being out of an ingredient.

Mmmm...the mini-chocolate chips are YUMMY additions!

Sometimes I frost them while they are still warm, too...

The one with Devil's Food cake mix are so yummy and so fast and easy. I think they are a great starter recipe for a crowd you are trying to teach and you are right, the measurements are nice and simple. I add in Ande's mints they taste like a minty dream icon_smile.gif

I've gotta tell ya', I would never have the patience to cook with 12 little girls..... my hat is off to you! thumbs_up.gif
