Questions About Serving Size Charts...

I'm know there have been so many posts about this topic, but I've searched and can't find what I'm looking for...

My question is, are the charts really accurate? They just don't seem to make sense to me... I can't imagine a 16" cake serving 90 people. I just made a 14" cake for a baby shower, and I am almost sure we didn't get 65 pieces out of it. I've looked at Wilton, Earlene's and Ladycakes' charts. I'm afraid of charging someone for 100 servings or whatever and they end up only getting 60 pieces of cake! Help!

I have gone back and forth with this issue. For weddings I go by wiltons wedding chart. When delivering the cake i include a cutting chart from Wilton. I also tell the bride that unless the cutting diagram is follwed they will not get the number of servings that I Quoted. so I tell them they can either take thier chances that it will be cut right or they can ordered additional servings. For Party cakes I use a 2x2 cutting guide.

I have a question that sort of goes along with this.

I am going to be doing a 'wedding' cake for a couple. This reception will be a couple of weeks after the wedding which will take place in another state.

Since the reception will be at 2:00 p.m. with only cake and punch served should I plan on larger serving sizes?

I would still only do the wedding size. If you have concerns I would talk to the bride. That would require for her to purchase more cake so you could explain the two different sizes and let her make the decision.

I use the Wilton servings chart, but use Earlene's cutting guide because I think it is easier!

I have actually taken the 8, 9, and 10" pans and used a dry erase marker and ruler and marked 1"x2" "cuts" (assuming 2-2" layers, so a serving is 1"x2"x4") on the back as per Earlene's cutting chart, and Wilton's servings are quite accurate, at least for those sizes, so I am sure they are just as accurate for all sizes!

I did this because there are a lot of people here and on other boards I have seen using Earlene's serving charts, but it is significantly different than Wilton's, and I just had to see for myself! I didn't want to short-change my customers--or myself!
