Cake Mix Help!

I am calling all you cake mix experts... can anyone tell me if there is any sucess in adding choc chips, cherries, nuts etc to cake mix. I am woundering if anyone has done this and how their cakes turned out ???

I've never added cherries or nuts to cake mix, but I have added chocolate chips with great success!

I think I have added just about everything icon_biggrin.gif Use a thick batter - add sourcream, milk, buttermilk (instead of water) and an extra egg to the mix. Toss the nuts, fruit, etc in dry cake mix or flour before folding in. This will help keep them suspended. Fold in carefully after the batter has been mixed completely. Heavy items, such as cherries need to be cut up first. They will sink to the bottom if they are too heavy. I like to use mini chocolate chips because they stay suspended and actually melt a bit and are wonderful.

Use the cake mix extender recipe too...makes it thick....I've added just about everything you can think of...all has turned out well!

Tiffysma...I'm curious, when you use sour cream instead of water in a cake mix recipe, do you use equal amounts, or do you adjust it? For example, if the recipe calls for 1&1/3c water, do you use 1&1/3 sour cream as well?

I have taken the DH spice cake mix and added coconut, nuts , raisins, and pineapple and it is awesome. I did not measure ...just threw it in. Made a cream cheese icing to go on it and it was really good.
